Shrimp Salad

I bought these Argentine shrimps for a quick fresh summer salad, and basically just added what I had in the fridge. Perfect for lunch or dinner!

Shrimp Salad

Ingredients
  

For the salad:

  • Shrimps
  • Grilled asparagus
  • Arugula
  • Red onion
  • Corn
  • Avocado

For the vinaigrette:

  • 3 tbsp  olive oil
  • 2 tbsp  lemon juice
  • 1 tsp honey
  • Salt and pepper

Instructions
 

  • For the vinaigrette, just whisk all the ingredients together.
    To assemble the salad, place vegetables and shrimps on a serving dish and drizzle with the vinaigrette.

Notes

Tips:
  • If the shrimps are raw, clean them and sautée in a hot saucepan on both sides, or boil them for 2-3 minutes and transfer to an ice bath to stop the cooking process.
