I bought these Argentine shrimps for a quick fresh summer salad, and basically just added what I had in the fridge. Perfect for lunch or dinner!

Shrimp Salad
Ingredients
For the salad:
- Shrimps
- Grilled asparagus
- Arugula
- Red onion
- Corn
- Avocado
For the vinaigrette:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp honey
- Salt and pepper
Instructions
- For the vinaigrette, just whisk all the ingredients together.To assemble the salad, place vegetables and shrimps on a serving dish and drizzle with the vinaigrette.
Notes
Tips:
- If the shrimps are raw, clean them and sautée in a hot saucepan on both sides, or boil them for 2-3 minutes and transfer to an ice bath to stop the cooking process.
