Rainbow Cake

There is no kid who doesn’t love this cake! It is made with sprinkles, that don’t actually add any particular flavor to this already delicious cake, but make it look really festive and fun! It is a double treat for kids!

This vanilla cake is super spongy, everybody likes it and the sprinkles are an eye-catching colorful addition. No party in the US is complete without a Rainbow or Funfetti Cake, both a kids’ and adults’ favorite. It usually has several layers, but personally I think it is much simpler to make one whole cake and then add a colorful frosting. 

Another option is to make Rainbow Cupcakes; they are awesome!

However, I do not recommend using very light-colored sprinkles because they don’t stand out, or the small round ones either, since they tend to melt. 

Instead of vanilla, you can use lemon, orange or any other flavor of your choosing.

For the frosting, just mix up all the ingredients and add a few drops of food coloring. Personally, I love a pink frosting with the sprinkles on top.

Rainbow Cake

Ingredients
  

For the cake:

  • 120 gr unsalted butter at room temperature
  • 200 gr white sugar
  • 2 eggs
  • 200 gr all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 160 ml milk
  • 1 1/2 tsp vanilla extract
  • 1/3 cup multi-colored sprinkles

For the frosting:

  • 110 gr unsalted butter at room temperature
  • 220 gr cream cheese at room temperature
  • 1 tbsp vanilla extract
  • A few drops of food coloring (optional)
  • 280 gr powdered sugar

Instructions
 

  • Preheat oven at 170°C/340°F. Grease and flour a 20cm/8-inch springform pan. Beat butter and sugar until light and fluffy. Add eggs, one at a time and beat. Add half of the flour, then the milk and vanilla, and finally the rest of the flour, baking powder and baking soda. 
  • Fold in the sprinkles and mix to combine. Pour into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean. 
  • For the frosting: Beat butter and cream cheese. Add vanilla and food coloring (optional). Add powdered sugar and mix. Spread the frosting all over the cake and decorate with more sprinkles.
