Actually, I am not a big fan of cauliflower, so I try to come up with creative ways of including it in our meals.
Today I harvested the first cauliflower from my vegetable garden and turned it into a tasty cauliflower “rice” salad for lunch, which I used raw!!
I removed the leaves, broke it into florets and processed them. You can also use a grater.
Then I added cucumber, tomato, red onion, parsley, mint and roasted almonds. Olive oil, a generous squeeze of lemon juice, salt and black pepper. A nice and very healthy dish!
There are also other ways to cook cauliflower that are not so common but make great side dishes:
– Cauliflower rice: Process the raw cauliflower florets. Sautée in a skillet with olive oil, add some chopped green onion, lemon juice, salt and pepper. Cook for a few minutes over medium heat.
– Grilled cauliflower: Cut the cauliflower lengthwise into 1-inch slices. Drizzle with olive oil and season with salt and pepper. Cook on a hot grill for about 6 minutes on each side, or until golden and tender. It will take less time if you only use the florets.
– Roasted cauliflower: Preheat the oven to 220°C/430°F. Place the florets on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper and lemon zest. Bake for 30 minutes or until golden and tender. Remove from the oven and sprinkle with chopped parsley.

Ingredients
- Cauliflower
- Cucumber
- Tomatoes
- Red onion
- Parsley and mint
- Roasted almonds
- Olive oil
- Lemon juice
- Salt and pepper
Instructions
- Remove the leaves, break cauliflower into florets and process.
- Add cucumber, tomatoes, red onion, parsley, mint, roasted almonds, olive oil, a generous squeeze of lemon juice, salt and black pepper.
Notes
- It is important not to overprocess the cauliflower.
- You can use the hard stems for soups.
- You can also make “rice” out of broccoli, carrots or beets.
