Heat the olive oil into a pan over medium heat, then put in the onions, carrots and garlic and cook for about 7 minutes or until tender. Season with salt and pepper.
Add in the tomatoes and cook for another 10 minutes until tender. Add milk, bouillon cube and simmer on low heat for 10 minutes.
Blend until smooth. If necessary, add a little more milk until desired consistency. Serve with grated Parmesan cheese, croutons, basil, seeds, or just plain!
