Plum Cake

Ingredientes
  

  • 150 g unsalted butter, at room temperature (10 tbps)
  • 220 g sugar (1 cup+1tbsp)
  • 120 g whole milk (1/2 cup)
  • 1 1/2 tsp vanilla extract
  • 2 eggs
  • 240 g all-purpose flour (2 cups)
  • 1 1/2 tsp baking powder
  • 4 to 5 plums, cut into 4 or 6 pieces (depending on the size)

For the topping:

  • 2 1/2 tbsp sugar

Instrucciones
 

  • Preheat the oven to 370°F/ 190°C. Grease and flour a 9 inches cake pan.
  • Mix the butter, sugar, milk, vanilla, and eggs. Add the flour and baking powder, and mix until well combined. Do not overbeat.
  • Pour the mixture into the mold and arrange the plums on top. Bake in the oven for 40-45 minutes.
  • Sprinkle the cake with sugar and return it to the oven for another 15 minutes or until a knife inserted comes out clean when tested.
