Oatmeal Banana Pancakes

Ingredientes
  

  • 2 whole eggs + 2 egg whites
  • 1 very ripe banana, mashed
  • 1 cup rolled oats
  • 1/2 tsp cinnamon + Β½ tsp ground ginger
  • Pinch of salt
  • 1 tsp baking powder
  • 2 tsp vanilla extract

Instrucciones
 

  • Put all the ingredients in a blender, and blend for 30-40 seconds until the oatmeal is ground and the batter is lumpy and thick. It is ok if there are some small bits of whole oats.
  • Heat up a small skillet over medium heat with 1 tsp olive oil. Pour approximately ΒΌ cup of the batter on the skillet and cook until small bubbles begin to appear on the surface. Flip over with a spatula and cook it for another minute, or until golden. Repeat with the rest of the batter.
