Grilled Zucchini

Ingredientes
  

  • Zucchini
  • Feta cheese (or Parmesan, goat cheese, Brie or ricotta)
  • Olive oil
  • Salt and pepper
  • Fresh herbs like mint, parsley or thyme (optional)
  • For the vinaigrette:
  • 1/4 cup olive oil
  • 1/8 cup balsamic vinegar or lemon juice
  • 1 tbsp Dijon mustard (or any other kind)
  • Salt and pepper

Instrucciones
 

  • Remove both ends of the zucchini. Cut lengthwise into 2 or 4 slices.
  • Sprinkle with salt and pepper, and brush with olive oil (you can also use your hands).
  • Heat a grill pan on medium-high heat. Sear the zucchini on both sides for about 3-4 minutes on each side. Serve with the cheese, herbs (optional) and the vinaigrette. 

Notas

Tips:
  • You can also serve them as a side dish for salads, meat, pasta, or together with other grilled vegetables.
  • Cook them until tender and you can see the grill marks.
