Remove both ends of the zucchini. Cut lengthwise into 2 or 4 slices.
Sprinkle with salt and pepper, and brush with olive oil (you can also use your hands).
Heat a grill pan on medium-high heat. Sear the zucchini on both sides for about 3-4 minutes on each side. Serve with the cheese, herbs (optional) and the vinaigrette.
