In a bowl, mix flour, yeast, olive oil and salt. Add warm water and mix. Turn out the dough onto an oiled work surface and knead until smooth. Place the dough in a bowl, cover with plastic wrap and let it rise for about 50 minutes.
Preheat oven at 250°C/480°F and place a baking sheet inside. Oil your hands, divide the dough into 3 or 4 equal pieces and stretch each one into a round or oval shape. Take the hot baking sheet out of the oven, place the flatbread on top and bake for about 10 minutes, or until golden.
Top with hummus, the salad, drizzle with olive oil, sprinkle with za’atar (or the spice of your choosing) and pepper. Cut and serve.
