Melt the chocolate together milk on a double boiler, making sure the bowl never touches the simmering water. Remove from the heat and add the yolks, one at a time, mixing until well combined.
Whip egg whites with sugar and reserve. In a separate bowl, whip cream and add to the chocolate mixture. Finally fold in the whipped egg whites.
Pour into a large bowl or serving glasses and chill for 6-8 hours.It can be served on its own or topped with a dollop of whipped cream and chocolate shavings.
