This is such an easy recipe to make! There are times when we feel like trying out new ways of cooking fish, and this is a great idea to combine it with vegetables. You can use any fish of your choosing, like hake, sole, salmon, etc.
All you need to do is arrange very thin slices of potato on a sheet of parchment paper, place the fish on top, salt, pepper, cherry tomatoes, fresh herbs (oregano, thyme, parsley) and a couple tablespoons of vinaigrette. Then fold the paper, seal the edges of the parcel and bake. You can totally use different vegetables; it will taste amazing!!

Fish en Papillote
Ingredients
- Fish fillets (hake, sole, salmon)
- Thin potato slices
- Cherry tomatoes
- Fresh herbs (oregano, thyme, parsley)
- Parchment paper
For the vinaigrette:
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp lemon juice
- Salt and pepper
Instructions
- Arrange very thin slices of potato on a sheet of parchment paper, place the fish on top, salt, pepper, cherry tomatoes, fresh herbs (oregano, thyme, parsley) and a couple tablespoons of vinaigrette. Then fold the paper, seal the edges of the parcel and bake in a preheated oven at 210°C/410°F for 15 minutes.
