This is fantastic to serve for lunch or brunch! The dough is very easy to make. This time, I topped it with hummus, arugula, cherry tomatoes, black olives, feta cheese, a drizzle of olive oil and a sprinkle of za’atar seasoning.
You can also top it with pesto, cheese, grilled vegetables, or simply some olive oil and a nice spice mix.

Flatbread

Ingredients
- 200 gr all-purpose flour
- 1 tsp active dry yeast
- 1 tbsp olive oil
- 1 tsp salt
- 120 gr warm water
Toppings:
- Hummus
- Arugula, Cherry tomatoes, black olives
- Feta cheese
- Olive oil, Za’atar, flaky salt, pepper
Instructions
- In a bowl, mix flour, yeast, olive oil and salt. Add warm water and mix. Turn out the dough onto an oiled work surface and knead until smooth. Place the dough in a bowl, cover with plastic wrap and let it rise for about 50 minutes.
- Preheat oven at 250°C/480°F and place a baking sheet inside. Oil your hands, divide the dough into 3 or 4 equal pieces and stretch each one into a round or oval shape. Take the hot baking sheet out of the oven, place the flatbread on top and bake for about 10 minutes, or until golden.
- Top with hummus, the salad, drizzle with olive oil, sprinkle with za’atar (or the spice of your choosing) and pepper. Cut and serve.
