Moist Banana Cake

Ingredients
  

  • 3 very ripe bananas, mashed
  • 1/2 cup yogurt
  • 2 eggs
  • 1 cup white sugar
  • 1 tsp vanilla extract
  • 1 pinch of cinnamon
  • 150 grs unsalted butter, melted
  • 220 grs all-purpose flour
  • 1 tbsp baking powder
  • 1 pinch of salt

Instructions
 

  • Preheat the oven to 180ºC / 350ºF. Grease and flour a 20cm (8 inch) round pan. 
  • Put the mashed bananas is a bowl. Add the yogurt, eggs, sugar, vanilla extract and cinnamon and mix well. 
  • Sift together the flour, baking powder and salt, and add to the wet ingredients. Mix well. Add the melted butter and mix until well combined.
  • Pour the batter into the pan and bake for 45 minutes, or until a toothpick inserted in the center comes out clean. Dust with powder sugar before serving.

This cake is quick and easy to make at weekends. No mixer required, all the ingredients are simply mixed together in a bowl and the batter is ready. I recommend that you use very ripe bananas, the ones with black peel are the best! They make the cake more flavorful, sweeter and moist.

Those who know me, know how much I love banana cakes, so I always make sure to have some extra ripe ones at home. There is nothing like a home filled with the aroma of banana cake baking in the oven!

Before serving, you can dust it with powder sugar, or just enjoy it on its own!
